Crispy Chickenburger

2 brioche buns

2 large chicken fillets

500 ml buttermilk

100 g BBQ rub

200 g Panko

1 L frying oil

a few leaves of Batavia lettuce

1/4 radish

1/4 bunch of spring onions

1 tbsp rice vinegar (or

white wine vinegar)

30 ml water

1 tbsp sugar

1/2 tsp salt

2 tbsp white barbecue sauce

2 tbsp sunflower oil

​Preparation in 7 steps

​Put the chicken fillets in a sufficiently large container, rub them with sunflower oil and massage in the BBQ rub. Add buttermilk and leave the fillets to marinate in the fridge for an hour.

Wash the radish and grate it coarsely. Put rice vinegar, water, sugar and salt in a small saucepan and simmer for 5 minutes. Mix the radish with the mixture and leave it to marinate in the fridge for half an hour.

Take the chicken fillets out of the fridge, drain it and roll it thoroughly in panko.

Heat the frying oil in a large saucepan (medium heat, approx. 180 °C).

Fry the chicken fillets for about 10 minutes until the breading is golden brown.

Wash the radicchio and pluck off the leaves. Wash the spring onions and cut them into rings.

The burger buns are cut in half and the bottom half is spread with sauce. Then radicchio is placed on top and the fried chicken fillet is arranged on top. Pickled radish is spread on top and garnished with spring onions and more radicchio. The top half of the bun is also spread with sauce and placed on top.
