For the burger
2 burger buns
440 g cod
300 g panko / breadcrumbs
100 g flour
2 eggs
2 slices of cheddar
1 onion
2 Lollo Bianco lettuce leaves
2 tbsp salt
2 L oil for frying
For the remoulade sauce
100 g Greek yoghurt
100 g mayonnaise
20 g capers
2 gherkins
1/4 bunch of chives
1/4 bunch of parsley
1/4 bunch of dill
1 tsp mustard
2 tsp sugar
1 tbsp olive oil
Salt & pepper
Preparation in 7 steps
Start by making the remoulade sauce. Finely chop the cucumber and capers. Wash the herbs, shake them dry and chop them finely. Mix the Greek yogurt and mayonnaise. Stir in salt, pepper, sugar, mustard and olive oil. Finally, add the chopped ingredients and stir thoroughly. In the meantime, chill the remoulade sauce.
Peel the onion and cut it into thick rings.
For the burger, beat the eggs in a bowl until frothy. Put the panko/breadcrumbs and salt in another bowl and add flour to another bowl.
Now pat the cod dry with kitchen paper and roll in flour. Remove the excess flour, then put the fish in the egg mixture and make sure it is completely covered. Drain the egg mixture and place the fish in the panko/breadcrumbs. Carefully ensure that it is well covered on all sides.
Heat a high pan with oil on the hob at medium heat to 175-180 °C.
ATTENTION: Always keep an eye on the hot fat and never leave it unattended on the hob. Make sure that the hot fat does not come into contact with water!
Now put the fish in the hot fat and fry for 4-7 minutes until the breading is golden brown. Then remove the fish from the fat and drain on kitchen paper. Place a slice of cheese on top so that it melts.
Cut the burger buns open and spread butter on both halves. Then fry them in the pan with the cut side down for about 30 seconds.
Halve the buns and spread remoulade sauce on the cut sides.
Top the bun halves with lettuce, fish and onions. Now finish the burger with the top half of the bun and finally serve.
