SMASHED Burger
The smashed burger is a real eye-catcher that is characterized by its special preparation method. As the name suggests, the meat for a smashed burger is "smashed". The meat is formed into a ball and then pressed flat with a spatula on the hot grill or hotplate. This "smashing" ensures that the burger is particularly juicy and has a crispy crust. This method also allows the meat to cook evenly. Ground beef is often used and seasoned with salt and pepper.
The smashed burger can then be topped with various ingredients such as cheese, tomatoes, onions, lettuce and various sauces as desired.
TIP:
Smashing works best with handy stainless steel smashers or a large scraper.

4 burger buns
640 g ground beef
(20-25% fat content)
1 onion
4 slices of cheddar
4 portions of pickles
4 tsp mustard
4 tbsp ketchup
1/2 tsp sugar
1/2 tsp salt
1 tbsp vinegar
4 tbsp oil for frying
Preparation in 6 steps
Slice the onions and add the onions to a bowl with salt, sugar and vinegar and set aside to let the ingredients soak in for a while.
Place the pan or grill plate in the direct zone of the grill and prepare the gas grill or stove for maximum direct heat.
The minced meat is formed into equal-sized balls of 80 g each. These balls are rubbed with a little oil, lightly salted and then placed on the hot grill plate or pan. Then some burger or baking paper is placed on the ground beef and flattened with the smasher until the patties are about 0.5 cm thin. The baking paper is carefully peeled off the patties and these are grilled or fried at high heat for about 1 minute.
Now it is time to turn the patties over and top half of them with cheese. Then one patty with cheese and one without should be stacked on top of each other. Add a tablespoon of water to the plate next to each stack and immediately cover with burger bells. The cheese should take about 15 seconds to melt.
Open the burger buns and place them on the hot plate with the bottom facing up for about 30 seconds to toast them.
Coat the cut surfaces of the buns with ketchup and mustard. Place the meat patties on the bottom halves of the buns, followed by pickles and onions. The last step is to place the top half of the bun on top.
