​Lentil burger

​The lentil burger is a vegetarian or vegan burger made primarily of lentils. The lentils are cooked and then mixed with various spices and ingredients to form a solid mass, which is then formed into a burger patty. This patty is then fried or grilled and served on a bun with various toppings.

The lentil burger is a popular alternative to traditional meat burgers and is often offered in vegetarian or vegan restaurants. It is not only delicious, but also high in protein and fiber.

2 brioche buns

80 g feta

1/4 beetroot (fresh)

1 handful of fresh spinach leaves

For the yogurt-mint sauce

100 g natural yogurt

4 mint leaves

1 dash of lemon juice

Salt, pepper

For the zucchini fritters

3 zucchinis

1 egg

2 garlic cloves

50 g parmesan

3 tbsp flour

150 g canned corn

1 shallot

1/2 red chili

1 dash of cream

Preparation in 8 steps

​To prepare the lentil patties, first add the couscous to a bowl and mix it with paprika powder, cumin and turmeric. Boil the same amount of water, pour it over the couscous, stir briefly, cover the bowl and let the couscous swell for 10 minutes.

The lentils should be cleaned and cooked together with vegetable stock in a saucepan on the stove or on the side burner for about 15 minutes and then drained.

Remove the skin from the carrot and grate it coarsely. Cut the spring onion into rings. Both the parsley and the dried tomatoes should be finely chopped. Put these ingredients together with the lentils, couscous and the rest of the ingredients in a mixing bowl and process into a dense mixture.

Form the mixture into even patties using a burger press or your hands.

Heat the hob with a pan and a little oil or the gas grill at 180 °C on indirect heat. The patties should be fried for a few minutes on each side or grilled at a low heat.

 


Now cut the burger buns and spread margarine on both halves. Then roast them for a few minutes on the grill plate or in the pan with the cut side facing downwards.


 

Mix the mayonnaise with harissa. After peeling the onion, cut it into slices and wash the lettuce.

 

​Cover the bun halves with lettuce and patty and then place the onion rings on top. Now finish the burger with the top half of the bun and finally serve.
